Recipes for bounty

For 15 years, Gaining Ground in Concord, a nine-acre farm, has been providing food for shelters, food pantries, and local families in need. Beneficiaries receive seasonal organic produce grown by staff and hundreds of volunteers. Not everyone eligible for this bounty knows how to use leeks, cabbages, barley, and some of the other seasonal ingredients. So the staff, board members, and volunteers collaborated on their first cookbook, with over 300 recipes for soups, salads, risotti, and breads. Copies of “The Gaining Ground Table’’ ($20) were given to the 40 families served by the program. Now everyone can get the farm’s recipes for beets, carrots, Swiss chard, collard greens, and other fall vegetables.
