Pies have become such a symbol of Thanksgiving that a holiday sideboard without a tempting pie selection would be a lonely sight indeed. The following day, leftover pie is the preferred dessert after a sandwich of sliced turkey, lettuce, and mayonnaise. On the next page is an unlikely array of pies, not the typical Thanksgiving offerings, but a fine lineup: a rustic pear and quince pie modeled after the French country galette; a white chocolate mousse tart decorated with whipped cream and shaved bittersweet chocolate; and a rich lemon cream pie.![]()
