3 yams or sweet potatoes, peeled and cut into 3-inch pieces
4 tablespoons butter, cut up
1 teaspoon nutmeg
1/2 teaspoon ground cinnamon
Salt and pepper, to taste
1/2 cup maple syrup
Set the oven at 350 degrees. Place the yams or sweet potatoes in a roasting pan. Sprinkle them with the butter, nutmeg, cinnamon, salt, and pepper. Drizzle them with maple syrup. Cover the pan with foil and bake the yams for 30 to 40 minutes or until they are tender.
In a food processor fitted with the steel blade, pulse the yams until they are pureed but not overworked. Transfer to a serving dish, taste for seasoning, add more salt and pepper if you like, and serve at once. Adapted from Flavors From the Heart: The Dorset Inn Cookbook, by Sissy Hicks (1999)
