Turkey burgers

In "The Healthy Kitchen," Andrew Weil and Rosie Daley offer these burgers, made from ground turkey mixed with chopped mushrooms. They cook them on a grill or in a skillet sprayed with vegetable cooking oil and serve them in whole wheat buns with lettuce, tomato, and onion. Serves 4.

1 pound ground turkey

4 ounces button mushrooms, chopped

1 small onion, chopped

1 teaspoon prepared barbecue sauce

1 tablespoon chili powder

1 teaspoon Cajun seasoning (see note)

Black pepper, to taste

1 tablespoon Worcestershire sauce

Cooking oil spray

4 whole wheat hamburger buns

1. In a bowl, combine the turkey, mushrooms, onion, barbecue sauce, chili powder, Cajun seasoning, pepper, and Worcestershire sauce. With a spoon or your clean hands, blend thoroughly. Make 4 patties of equal size.

2. Heat a skillet over medium-high heat. Spray patties lightly with cooking oil spray. Cook the patties for 7 minutes on a side or until they are cooked through.

3. Toast the buns and fill each with a burger and garnish.

Note: To make your own Cajun seasoning, blend together 1 teaspoon paprika, 1/2 teaspoon cayenne pepper, 1 teaspoon salt, 1/2 teaspoon oregano, and 1/2 teaspoon basil. Store in an airtight container.
