Apple cake

1 1/2 cups vegetable oil
2 cups sugar
2 teaspoons vanilla
3 eggs
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
3 cups diced apples

1. Set the oven at 325 degrees. Grease and flour a 10-inch Bundt pan.

2. In an electric mixer, beat the oil, sugar, and vanilla until fluffy.

3. Add the eggs, one by one, beating until smooth and fluffy.

4. In another bowl, sift the flour, baking soda, salt, and cinnamon.

5. With the mixer set on its lowest speed, beat the dry ingredients into the egg mixture until the batter is just smooth.

6. Fold in the apples. The batter will be very stiff. Transfer the batter to the prepared pan. Bake the cake for 1 hour or until a skewer inserted into the cake comes out clean.
