Lemon and basil chicken

Serves 4

4 bone-in chicken breast halves with the skin (about 2 pounds total)
Salt and pepper, to taste
4 large basil leaves
4 thin slices lemon
4 cloves garlic, crushed
1 tablespoon olive oil

1. Set the oven at 400 degrees. Place the chicken in a baking dish large enough to hold it in one layer. Sprinkle both sides with salt and pepper. Set the chicken skin side up.

2. Loosen the skin from each breast and slip a basil leaf between the skin and meat. Set a lemon slice on top of each breast. Scatter the garlic on top. Drizzle with olive oil.

3. Bake the chicken, basting occasionally with the pan juices, and turning the chicken halfway through cooking, for 35 to 40 minutes or until the breasts are cooked through.
