Chipotle BBQ sauce

Makes about 3 cups

1½ cups ketchup

½ cup dark beer

1/3 cup molasses

1/3 cup cider vinegar

1/3 cup lime juice

3 tablespoons canned chipotle peppers, pureed

1 tablespoon ground cumin

1 tablespoon ground coriander

¼ cup chopped fresh cilantro

Salt and pepper, to taste

1. In a large bowl, combine the ketchup, beer, molasses, vinegar, and lime juice. Stir well.

2. Stir in the chipotles, cumin, coriander, cilantro, and salt and pepper to taste.

3. Use for grilled pork or beef.
