Grilled sirloin tips with orange-soy glaze

Serves 6.

1/4 cup plus 1 tablespoon soy sauce

1/4 cup sweet orange marmalade

1/4 cup honey

1 tablespoon rice vinegar

Pinch of crushed red pepper flakes

2 pounds sirloin tip steaks

Salt and black pepper

2 scallions, thinly sliced

1. In a small saucepan, bring 1/4 cup of the soy sauce, marmalade, honey, rice wine vinegar, and red pepper flakes to a simmer over medium heat. Remove from the flame and let cool to room temperature. Distribute the glaze evenly into 2 bowls.

2. Prepare a two-tiered fire on your gas grill with a medium-high and a medium-low area, or prepare a charcoal grill with a medium and a low area. Sprinkle the steak with salt and pepper and with the remaining 1 tablespoon of soy sauce.

3. Grill the steak on the hotter part of the fire for about 5 minutes, flipping after a couple of minutes, until it's rare; it should register between 115 and 120 degrees on an instant-read thermometer.

4. Transfer the steaks to the cooler part of the flame. Grill, brushing generously with half of the glaze, until the beef is done to your liking, about 4 more minutes for medium.

5. Let the beef rest for 5 minutes, thinly slice, and sprinkle with the scallions and some of the remaining glaze. Serve at once.
