This is a quick side dish for broiled fish or roast chicken. Let the peppers marinate overnight. Serves 4.
|1||jar (8 ounces) roasted red peppers|
|¼||cup golden raisins|
|2||tablespoons olive oil|
|1||tablespoon red wine vinegar|
|Salt and pepper, to taste|
|2||tablespoons fresh parsley, chopped|
2. In a serving bowl, layer the peppers, raisins, and capers. Sprinkle with oil, vinegar, salt, and pepper. Make another layer of the mixture until all the ingredients are used. Cover tightly with plastic wrap and refrigerate overnight.
3. Carefully turn the peppers, raisins, and capers. Sprinkle with parsley and serve at once.
