Serves 4
Serve this rich salad over lettuce greens, with crackers, or stuffed into a crusty baguette.
| 1/2 | pound smoked bluefish |
| 1/2 | cup finely chopped celery |
| 2 | tablespoons chopped red onion |
| 1 | tablespoon coarsely chopped capers (optional) |
| 2 | tablespoons chopped Italian parsley |
| 1 | tablespoon red wine vinegar |
| 1 | tablespoon lemon juice |
| 2 | tablespoons mayonnaise, or more to taste |
| Black pepper, to taste |
2. Add the celery, onion, capers (if using), parsley, vinegar, lemon juice, mayonnaise, and pepper. Fold gently, taste for seasoning, and add more mayonnaise or black pepper, if you like.
