Warm Asian green bean salad

Serves 4

1 teaspoon toasted sesame oil
2 tablespoons soy sauce
1/2 teaspoon coarse salt
1 teaspoon sugar
2 tablespoons vegetable oil
1 pound green beans, trimmed
1/4 cup water
1 tablespoon white (hulled) sesame seeds
1. In a small bowl, whisk the sesame oil, soy sauce, salt, and sugar together until the sugar dissolves.

2. In a large skillet, heat the vegetable oil. Cook the green beans over high heat, stirring constantly, for 1 minute. Add the water. Immediately cover the pan, lower the heat to medium, and cook the beans for 3 minutes or until they are just tender but still bright green.

3. Remove the cover, raise the heat to evaporate any remaining water, and add the sesame oil mixture; reduce the sauce for 1 to 2 minutes to thicken it. Sprinkle with sesame seeds.
