Serves 6
| Butter or margarine (for the dish) | |
| 6 | large carrots, sliced |
| 1/4 | cup raisins |
| 1/4 | cup brown sugar |
| 1 | teaspoon ground cinnamon |
| Salt, to taste | |
| 1 | tablespoon flour |
| 1/2 | cup orange juice |
| 1 | tablespoon unsalted butter or margarine |
1. Set the oven at 350 degrees. Grease a 2-quart baking dish.
2. In a small saucepan, combine the carrots and enough water to cover them by 1 inch. Bring to a boil, lower the heat, and cover the pan. Cook for 10 minutes or until the carrots are tender. Drain them and transfer to the baking dish.
3. Sprinkle with raisins, brown sugar, cinnamon, and salt.
4. In a small bowl, stir together the flour and orange juice until the mixture is smooth. Pour the orange mixture over the carrot mixture. Dot with the butter or margarine.
5. Bake for 45 to 55 minutes or until the carrots are tender.![]()
