The Elvis

Serves 2

2 tablespoons unsalted butter, room temperature
4 slices white bread
3 tablespoons smooth or crunchy peanut butter
1 large banana, peeled and cut in half, then sliced in half lengthwise.
4 slices of bacon, cooked (optional)

1. Place a large skillet over low heat.
2. Spread the butter on one side of each slice of bread. Spread the peanut butter on the other side of each slice.
3. Add two banana slices and two bacon slices, if you like, to two of the bread slices, butter side down. Top each sandwich with remaining bread slices, peanut butter side down.
4. Increase heat to medium and add both sandwiches to skillet. Cook for about three minutes on each side, pressing with a spatula or until golden brown on both sides. Serve immediately.
