Spinach with sesame seeds

Serves 4

2 1/2 tablespoons white sesame seeds
1 bunch (1 pound) fresh spinach, stems removed, leaves well rinsed
1 1/2 teaspoons sugar
1 1/2 teaspoons reduced-sodium soy sauce
Pinch of salt
1. In a cast-iron skillet, toast the sesame seeds until they are golden, shaking the pan constantly. Leave them to cool. In a food processor, grind the seeds.

2. Bring a large saucepan of water to a boil. Turn down to medium-high heat, add the spinach, and cook for 30 seconds or until the leaves are just wilted but still bright green. Drain and rinse with cold water. Gently squeeze the spinach to release the excess water.

3. In a small bowl, stir the sesame seeds, sugar, soy sauce, and salt until well blended.

4. Cut the spinach into 1-inch pieces and place in a small bowl. Pour the sesame mixture over the spinach and toss well to combine.
