If tuna tartare sounds too, well, European, there's always the Hawaiian version: poke. Traditionally made with raw fish, seaweed, and kukui nuts, poke (pronounced ''PO-keh") is ubiquitous in Hawaii, where street vendors and hotel chefs and home cooks all have a version.
