Fresh berry bismarck

This was one of the first recipes Debra Ponzek learned to make. Bismarck also goes by ''Dutch baby." Serve this with maple syrup and fresh berries.

Serves 2

2 tablespoons unsalted butter
1/2 cup flour
1/2 cup milk
2 eggs
Pinch of salt
Confectioners' sugar (for sprinkling)
1. Set the oven at 475 degrees. Have on hand a 10-inch skillet with a heatproof handle.
2. Put the butter in the skillet and let it melt just until it bubbles but does not burn. Watch it carefully.
3. In a bowl with a whisk, mix the flour, milk, eggs, and salt until smooth. Pour the batter into the skillet and transfer it to the oven.
4. Bake the bismarck for 12 minutes or until the batter is puffy and golden brown. Slide the pancake onto a serving plate and sprinkle with confectioners' sugar. Cut in half to serve.
