Toasted breadcrumbs

Makes about 1 cup

In ''Recipes from Gangivecchio's Sicilian Kitchen," authors Wanda and Giovanna Tornabene explain that instead of Parmesan cheese, you can also sprinkle pasta dishes with toasted breadcrumbs. Poor Sicilians did this when they couldn't afford cheese. In a skillet, heat 2 tablespoons olive oil and cook 1 cup stale crumbs for 5 minutes, stirring often so they brown evenly.
