A tasty (and easy) way to start the day

You may think of breakfast sandwiches as something you'd sooner buy than make, but that doesn't have to be the case. Easy refrigerator biscuits -- no, they're not ready- made, but everything you need is already in your refrigerator -- are a snap to put together, with no special equipment or skill required.

If you have butter and milk on hand, you'll be all set. Check the pantry for flour, baking powder, and salt. To make the egg filling neat and professional looking, cook the eggs omelet-style (rolled into a long oval ), then cut them into four equal pieces, so you won't have any small pieces of scrambled egg falling out of the sandwiches when you pick them up. If you have a large square skillet, use that; simply cut the egg pancake into fourths.

After you make them once, there's no need to restrict these biscuits to the breakfast table. Use them for lunch sandwiches, or an informal chicken dinner. Or, add 1 tablespoon sugar, sprinkle the unbaked biscuits with more sugar, and use them for dessert shortcakes. -- KERI FISHER
