This wrap is worth taking

Whoever invented the English dish "toad in a hole" must have had young children. The toad is a sausage, the mixture around it something like Yorkshire pudding -- think airy meat-flavored popover. It's like a pig in a blanket on steroids.

It may all be in the name, but wrap meat in pastry and you've got something kids will love, which is why it makes sense to have an American version, in miniature, for tiny hands to hold.

This version replaces the Yorkshire pudding with cornbread, and the fatty pork links with leaner turkey sausage. Simply bake cornbread mixed with yellow cornmeal with chunks of the sausage pressed into the batter. The muffin part rises up around the sausage, but the bits of link will peek out like a frog in a bog.

Since kids love cakey cornbread, this one is slightly sweet and very corny. The result is a meal in a muffin, with vegetables, meat, and starch all in a tasty little package, perfect for school lunches or for reheating in a toaster for breakfast. They're especially good for breakfast with a drizzle of maple syrup. -- KERI FISHER
