Alla Pevzner's charlotte

Makes one 9-inch cake

Butter (for the pan)
3 eggs
1 cup granulated sugar
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3 apples, coarsely chopped
1 cup fresh cranberries
Confectioners' sugar (for sprinkling)
1. Set the oven at 350 degrees. Butter a 9-inch springform pan.

2. In a large bowl, mix the eggs and granulated sugar. Beat well with a whisk. Use a spoon to stir in the flour, baking soda, and salt.

3. Spread apples along the bottom of the pan. Place the cranberries on top of the apples. Spoon batter into the pan, covering the apple mixture.

4. Bake the charlotte for 30 to 40 minutes or until it is set. Release the spring from the sides and sprinkle the charlotte with confectioners' sugar. Adapted from "Our Best Recipes"
