Chocolate chip cookies

Makes 24

1 cup all-purpose flour
1/4 cup cake flour
2 teaspoons salt
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1/4 cup walnuts, chopped
1/2 cup pecans, chopped
1. Set the oven at 375 degrees. Line 2 baking sheets with parchment paper.

2. In a bowl, combine the all-purpose and cake flours with the salt, baking powder, and baking soda. Whisk to blend them.

3. In an electric mixer, cream the butter until soft and light. Add the brown and granulated sugars and beat until smooth.

4. Beat in eggs, followed by the vanilla.

5. With the mixer set on its lowest speed, beat in the flour mixture. Remove the bowl from the mixer stand.

6. With a spoon, stir in the semi-sweet and white chips, with the walnuts and pecans.

7. With a teaspoon, drop mounds of the batter on the baking sheets, leaving 1 1/2-inches between each mound. Bake the cookies for 10 to 12 minutes or until they are just set.

8. Let the cookies cool on the baking sheets for a few minutes, then transfer to wire racks to cool completely. Store in airtight containers. Adapted from Todd English
