Ballpark mustard

Makes about 1/4 cup

This mustard is wasabi-like and doesn't resemble the store-bought variety. Be prepared for a powerful kick.

3 tablespoons dry mustard powder
1 1/2 teaspoons sugar
1/4 teaspoon salt
1 teaspoon vinegar
2 teaspoons cold water
1. In a small bowl, stir the mustard powder, sugar, salt, and vinegar to form a thick paste. Gradually stir in the water.

2. Serve at once or, to temper heat, leave exposed to air for about 30 minutes. Adapted from Virginia Taylor
