Recipe #3: Green Salad Tossed with Vinaigrette with Mediterranean Flavors
1. Mix first seven ingredients (all but the lime juice) with fork in small bowl.
1 tablespoon capers
1 teaspoon minced fresh thyme
1 tablespoon minced fresh parsley
1 medium clove of garlic minced fine
1/2 teaspoon table salt
1/4 teaspoon ground black pepper
5 tablespoons extra virgin olive oil
4 teaspoons lime juice from one-half of a medium lime
2 quarts mild salad greens such as romaine, Boston, Bibb, or other leaf lettuces
2. Add lettuces to a large salad bowl (at least 4-quart). Just before ready to serve, whisk lime juice in with the other dressing ingredients, and toss the salad greens to coat.
