Only a few places -- Tu Y Yo, Forest Cafe, and a handful of others -- fill the pent-up demand. That's not the case in southwestern Kansas. More and more Mexican places popping up. These aren't the Tex-Mex spots of my youth, and they're not fancy, for the most part, but authentic and sometimes amazingly good. So if you want great pork carnitas, soft tacos served with Guadalajara-style chili sauce, or a small fresh-water fish scored and grilled with spices and served with avocado and ripe tomatoes, head to Kansas. In Garden City earlier this week, my sister and I waited for our order at El Chaparro while two young women in McDonald's uniforms sauntered in on their dinner break to eat the food they really wanted. Grocery stores also sell a wide range of spices, chilies, and fresh tortillas. This weekend, I think I'll make a recipe from one of Rick Bayless's books.
