The restaurant industry should see a 5 percent growth in sales in 2007, according to the National Restaurant Association. It's a rosy projection, of course, but considering the current boom in meals out, probably not far off the mark, with $537 billion in sales foreseen. The association's 2007 Restaurant Industry Forecast also predicts trends for 2007. Bite-sized desserts will be hot. Flatbreads, figs, fresh herbs, exotic mushrooms, and pomegranates are popular. Latin American and Asian fusion rank up there, along with specialty sandwiches. And consumers love locally grown and organic vegetables, and grass-fed and free-range meat.
