Mac 'n' cheese with a kick

mac.JPG

Mac 'n' cheese is the perfect comfort food. But that doesn't mean it can't be improved upon.

Here's how: Roast some poblanos; peel, discard their guts, and chop. Ever so lightly, toast some corn tortillas in a frying pan. Rip tortillas into little pieces and chuck them in the food processor with a bunch of chopped cilantro, the chopped poblanos, and some garlic. Blend to a rough paste. Make mac as usual, but before baking stir in the poblano mixture.

Your green-flecked mac will be spicy, cheesy, and incredibly delicious.
