Easiest dinner imaginable

Last week Globe contributor Debra Samuels dropped off a can of Italian cherry tomatoes. It was Friday night, when the snow was already falling hard. I stayed late at work, hoping the roads would be plowed by the time I left (they weren't).

We had a chicken in the fridge and some onions in the pantry and honestly, that was about it.

My husband cut the onions into wedges and put them into the bottom of a favorite cazuela, a pottery baking dish I've had for years. A 1/2 cup of water went in next, then the chicken pieces, olive oil, salt, pepper, and the tomatoes.

When I asked my husband how long he roasted it for and he said, "As long as it took to shovel the driveway." I think that was close to an hour. We made the dish again early this week with some fresh hothouse tomatoes I found.

Prep time: 5 minutes.
Cook time: The length of your driveway.
