No longer under the radar

In an era when splashy restaurants seek and get lots of publicity, it's nice to see the little guy succeed. That's the story of Gabriel Bremer of Salts in Cambridge, who was just named one of Food & Wine magazine's best new chefs of 2007. He's in the center (above) with his wife and co-owner, Analia Verolo.

When I called to ask about celebrating, Bremer, in his usual low-key manner, says the realization he won "didn't hit me until I was on the podium Wednesday" in New York. Salts, which just celebrated its third anniversary, has 38 seats, no bar, and does little publicity. "We're letting what we do talk," says the 29-year-old chef.

Obviously, the eating public is listening. By the way, latest ingredients on Salts' menu: cepes, ramps, wild sturgeon, and milk-fed young pork from Quebec.
