Over the weekend, I made a chocolate flan on Saturday and lemon meringue tartlets on Sunday. Both were successes -- at least judging from the amount of time it took for the guests to finish them off. This morning I mused about why it seemed that the flan, from Rick Bayless's "Mexican Kitchen" was just as labor-intensive as Meyer lemon tarts from "Chez Panisse Desserts," a favorite book of mine. After all, the tarts involved making, rolling, and cutting seven small tart crusts, plus making lemon curd, and whipping meringue. But pies never faze me. I've made crusts since childhood and they seem easy. Flan, on the other hand, is simple but tricky. There's the caramel to line the pan. In this recipe, there was chocolate to chop and melt in hot milk. And then there's the cooking time -- too little and the flan is runny, too much and you've got cottage cheese. I think all bakers have their sure-fire desserts. Is it cake for you, flan for someone else, and pie for me? I'm not sure, but I've decided that Easter dessert will be a pie.
