Softshell crabs are in!

My husband and I have an occasional Happy Happy Hour with Deb Samuels, a contributor to the Globe Food pages, and her husband, Dick. We began this in Sicily two years ago, when they were on an extended stay and we were visiting. Happy Happy Hour begins with a drink and then morphs into dinner, but no one moves from the sitting area, since that would make it too formal.

We bring the happy part of the equation (my husband, Stephen Meuse, is the Globe's wine writer), and Deb cooks. Essentially Dick and I are along for the ride.

Last weekend Deb made a variety of great nibbles, which included these crisp soft shell crabs, here turning golden in the pan:

Then on their platter (where they sat for approximately 10 seconds).

They were incredibly delicious!
