Ham biscuits

Anyone who has spent time in the South knows that nothing beats country ham and a good biscuit. For a story coming out in Wednesday's Food section on buying a country ham (look for the recipe on boston.com/food), I fiddled with biscuits over the weekend. The version I settled on took me five minutes to make by hand, 12 minutes to bake. They're really good.
