Recipes often tell you that a sauce is only as good as the wine you put in it. Here is the textbook example. "Tastes like a hillbilly made it in a still," one taster said. The thick sauce tasted and smelled strongly of wine you would never sip. Some found the flavor "synthetic," while others couldn't even be so kind. "Can tomato sauce go bad before you open the jar?" one asked.
