Several years ago, Morning Glory muffins ($2) were taken off the Nashoba Brook Bakery menu and customers were not pleased. "Where's that muffin?" Kim Kremer, the cafe's manager, says they asked. And so, about a year and a half ago, the muffins came back. Based on carrot cake - but firmer in texture - the sweetly spiced Morning Glories are filled with shredded carrots, coconut, nuts, and raisins. Before they go into the oven, the batter is sprinkled with coarse crystal sugar, which bakes into a crunchy topping that contrasts nicely with the tender crumb. "They're baked fresh every morning," says Kremer. "If we stopped making them, there'd be picketers outside." Nashoba Brook Bakery, 152 Commonwealth Ave., W. Concord, 978-318-1999.
