A preview of new restaurants

The diner experience is quintessential Americana, scented by bacon and fried eggs. Unless that diner is Veggie Galaxy, a new vegan/vegetarian restaurant and bakery from the same folks behind Harvard Square’s long-lived Veggie Planet. Located in Central Square, Veggie Galaxy opened earlier this month.
Here, eggs and cheese can be replaced by vegan substitutes, and breakfast “meat’’ is seitan chorizo or tempeh bacon. The menu offers omelets such as the Cambridge Street (with chipotle black beans, roasted red pepper puree, cheese, corn, and shallot and apple salsa), or you can build your own. Also on offer: breakfast sandwiches, French toast stuffed with banana-nut vegan cream cheese, and silver dollar pancakes with caramelized banana butter, Taza chocolate, and candied walnuts.
Lunch brings soups, salads, and sandwiches - a Reuben made with smoked tofu; chipotle black bean burgers and mushroom chickpea burgers with a wide variety of toppings. Veggie Galaxy is open 11 a.m.-3 p.m., then reopens at 5 for dinner, adding vegan and vegetarian twists on diner classics, such as seitan loaf and vegetable pot pie. All desserts are vegan, from lemon meringue pie to ice cream sundaes. There are also cookies, cupcakes, and other bakery treats to take home.
Breakfast, of course, is available all day. This is a diner, after all.
