Tarragon lemonade

Makes 3

SYRUP

2/3 cup sugar

1 1/3 cups water

2 sprigs fresh tarragon

1. In a small saucepan over low heat, cook the sugar and water, without stirring, until the mixture is clear. Remove from the heat.

2. Add the tarragon. Let the tarragon to steep for at least 30 minutes. Strain and discard the solids.

DRINKS

2 cups lemon juice

2 cups water

Salt, to taste

1. In a pitcher, combine 1 cup of the syrup with the lemon juice, water, and salt. Chill thoroughly.

2. Pour over ice in 3 tall glasses. Adapted from Straight Wharf
