‘Dreams’ of Peru

Peruvian food — ceviche, anticuchos (beef-heart kebabs), Chifa (a fusion of Peruvian and Chinese cuisines) — is becoming increasingly popular, and Bostonians can see how Peru’s diverse landscape and immigrants shaped its rich cuisine at the Boston Latino International Film Festival on Friday. The feature “Cooking up Dreams’’ hears from unsung Peruvian cooks and famed chefs such as Ferran Adria and Gaston Acurio about how Peruvian food helped integrate a people historically divided by ethnic and economic differences. The 11-minute “Panca’’ explores Peruvian cuisine in New York with renowned chef Emmanuel Piqueras. A question-and-answer session with director Juan Manuel Calderon follows.
