Strip T’s Burger
Each patty is fashioned from 9 ounces of chuck mixed with beef cheek and trimmings from the restaurant’s skirt steak. Topping the burger are smoked miso, lemon aioli, and pickled onion. It’s served on a specially made Iggy’s brioche with poppy seeds. — R.T.
