Taberna de Haro
There are sleeker (Estragon), livelier (Bar Lola), and cozier (Dali) tapas joints in town, even some with more sophisticated fare (Toro). But this hidden jewel takes the croqueta for authenticity and laid-back ambience. Inside, the bustling bar and the pumpkin-and-plum color scheme evoke a tapas bar in Seville, though the more ambitious offerings favor Madrid as does the stellar wine cellar. In mild weather, arrive before sundown, get your name on the list for a patio table, and spend the pre-meal conducting your own sherry taste test at the bar and perhaps nibbling a pincho or two.
