It's a tough job, but someone has to do it: Bon Appetit restaurant editor Andrew Knowlton logged "countless hours and traveled thousands of miles" to unearth the country's 50 best new restaurants. Two Cambridge spots made his list: Will Gilson's Puritan & Company (love that swordfish pastrami) and Matthew Gaudet's West Bridge, known for its signature "egg in a jar."
At Puritan, "The light-filled room brims with personal touches like mismatched antique aperitif glasses on the tables," Knowlton enthuses. (He also likes the swordfish.) Down the road apiece at West Bridge, he appreciates Gaudet's "high-level French-inspired food" and the bar's stock of house-made syrups.
Gilson and Gaudet are in exciting company: Other restaurants on the list include Adler, the much-hyped New York City gastropub from Wylie Dufresne, and Chicago's Grace, the renowned restaurant from Grant Achatz protege Curtis Duffy.
