Removing Pin Bones
If you buy a large piece of salmon, you should double-check for and remove pin bones (especially if the salmon is wild) before cutting it into portions.

If you buy a large piece of salmon, you should double-check for and remove pin bones (especially if the salmon is wild) before cutting it into portions. Expose the bones by turning over a large mixing bowl and draping the salmon over it, flesh side up. The tips of the pin bones will pop up and out, so they are easier to locate by eye or feel and to grasp with tweezers or needle-nose pliers to pull out. -- A.R.![]()
