A cherry pitter is mandatory when you cook with fresh cherries. Set the cherry in the hopper at the end of one arm and squeeze, sending a small plunger built into the end of the other arm through the fruit, ejecting the pit. It’s quick and easy -- pitting a pound takes less than 10 minutes -- and guaranteed to squirt cherry juice in your eye. That is, unless you use the clever OXO Good Grips Cherry Pitter (near right), which includes a splatter shield.
