Making tortilla espanola is certainly not difficult, but flipping it does require a little technique. If your pan doesn't have a lid, use a rimless plate. And try to execute steps 2 and 3 in one seamless motion. 1. Just before you flip the tortilla, loosen it by sliding the spatula between the egg and the skillet walls.
