Recipe from a reader
Frequent chatter Mansfield Mom sends in this excellent-sounding recipe--I'll be trying it as soon as I get home. Thanks, Mansfield Mom!
Avocado Salsa
1 red onion, chopped
3-4 cloves of garlic, minced
2 red peppers, chopped
1 bag frozen shoepeg corn (or whatever corn you can find)
1/2 cup lemon juice
1/3 cup olive oil
1/2 tsp oregano
2 small cans chopped black olives
salt & pepper to taste
4 ripe avocados, chopped
I usually mix everything up the night before & add the avocados the morning of the party. However, in a pinch, you can just mix the whole thing up together.
