Maria arises at 4:30 am to arrive at the brewery by 6:30. At 6:45 the delivery man arrives with several fresh bags of malt from North Country Malt Supply in upstate New York. The malts, the brewer’s term for malted barley, are barley grains that have been treated in several steps to make them ready for brewing. Most of the grains used by John Harvard’s are imported from France, Belgium, Germany, England, and elsewhere in Europe. They use only malted barley in the brewing process except when they use wheat for wheat beer.
