I love ...
Eddie Vedder's "You've Got to Hide Your Love Away."
Sean Penn/Aimee Mann's "Two of us."
Allison Krauss' "I Will"
Rufus Wainwright's "Across the Universe."
On the flip side ...
Could not hate Aerosmith's "Come Together" any worse. -

Joe Cocker belting out She Came in Through the Bathroom Window on his second album, when his voice was at its gravelly finest. He also covered Something and Let It Be on the same album. -

Bela Fleck used to do at least one every show. (the man is a god) "Oh! Darling" was awesome.
Ritchie Havens - Here Comes The Sun ...always gives me chills
The Flying Lizards - Money (That's What I Want)
Jerry Garcia Band - Dear Prudence
Black Keys - She Said She Said
Elliott Smith - Because
Pixies - Wild Honey Pie
Phish covered the entire White Album live...most of it is pretty great.
The oft-mentioned tribute to George at the HOF ceremony "While My Guitar Gently Weeps" - Tom Petty, Jeff Lynne, Dhani Harrison, et al, solo by Prince
And lastly:
Norwegian Wood - P.M. Dawn -

Money (that's what I want) is not a Beatles original. Although the Beatles version is the best known. The song has been covered by almost every garage band of the 60's....jessey...even Cheap Trick did this song!!! -

Greenday - Working Class Hero is pretty good, though not nearly as spine tingling as the original (which I am not sure is possible anyway) -

This is pretty lame, but yesterday after a cardio class at my gym, the instructor put on some cool down / stretching music and what was it? Beatles covers "new age" style -- all acoustic guitar. Wish you could have been there. I started laughing out loud. :D
Also, Eva Cassidy has covered "Yesterday" and "Imagine" with her signature style, quite beautifully. -
