Seems like the best ones have already been mentioned.
I will add Ozark Mountain Daredevils. Though not one of my favorites, the song Jackie Blue is a great song.
There are lots of states that have a town of Jefferson....so does Jefferson Airplane count?, they are easily one of my favorites.
