my mom would always make candied yams from the can & mix them with butter & brown sugar on top of the stove. (and maybe other things, I'm not quite sure)
Last night I tried making it from fresh yams - any suggestions on how to make them from scratch? I roasted them in the oven with butter & brown sugar, took them out & sauteed them in a pan b/c the butter & sugar weren't carmelizing in the oven & then put them back in the oven b/c the yams were still pretty firm.
She never used marshmallows but now I'm intrigued and thinking I'll try to get her to use marshmallows this year.

Try adding orange juice and corn syrup or maple syrup. Bake 400 for 50-60 min.
