    Chicken Cordon Blue

    I used to make a stuffed chicken florentine

    saute some ham or prosciutto in butter with onion, spinach and fresh herbs

    then add cheeses like parmesean and goat cheese or ricotta

    stuff in between two thin pounded chicken cutlets

    flour, eggwash and fry in oil like chicken francaise
    then simmer in a lemon butter white wine sauce

    you can play around with the cheese mixture and add gorgonzola

    maybe some sun dried tomatoes in the filling or sauce

    I saw a good one the other day add some grilled pineapple to the middle

    and it's a Hawiian Cordon Blue

    Chicken Cordon Blue

    I never thought to add pineapple, but I guess it can work. Ham/pineapple pizza tastes good.

    I like chef1a's idea about using gorganzola. I have been using it in lots of places where I used cheddar and it works pretty well. I especially enjoy grilled gorganzola cheese burgers.
