    Easy Chicken Eggplant Parmesan

    i cut the eggplant lenght- wise at least 1/2" thick. �I put the bread crumbs on the eggplant and fry it for the flavor. For the sauce I use San Marzano tomatoes cooked with garlic and oregano. �I put sauce on the bottom of a backing dish followed by the eggplant, a little more sauce, parmigian�cheese,�fried chicken breast, sliced mozzarella and�sauce. Bake it covered at 375 for about 10 minuetes then 10 more minutes uncovered.�A meat sauce does not sound appetizing to me.

    Easy Chicken Eggplant Parmesan

    I like grilled eggplant as well as onions and zucchini. I splash a good balsamic vinegar on them.�The classic Italian dish would use veal not chicken. The�Americans substitute chicken for veal.I found this out the other day at an Italian dinner/conversation at BU.
