I have been positively toiling at work, so I have not been enjoying the summer, much less cooking anything worthy of the season.
Last week I started to remedy that by cooking some of my summer favorites. My absolute favorite food is stuffed grape leaves, I know that I have said that about other things, but this time I really mean it :)
I have grape leaves growing in my back yard, both wild and cultivated. So last year I started experimenting with stuffing fresh leaves instead preserved ones. Here is a picture of both vines.
Believe it or not, the wild leaves actually work best. They are most supple and not hairy at all.
The dish take 2 hours to make including cooking time and makes great leftovers. Each leaf contains close to one fifth of your recommended daily fiber allotment and is loaded with vitamins.
